About 6 or 7 weeks ago, I was flipping through the Whole Living Magazine while waiting to get my eyebrows waxed at this local spa. I came across this article about Vegetarian eating and it's benefits. I don't remember much but at the time I was very interested in the diet and weight loss aspects. I have always loved animals but I chose to be ignorant and I chose to disconnect with the idea that eating meat meant eating animals. Once I got to my computer, I started researching vegetarian recipes and decided to try it out. At first, I was allowing myself to eat eggs and cheese. In my efforts to get more recipes and information, I discovered goveg.com and all its information about animal cruelty. Instantly I was so sick to my stomach. Since then I have chosen the Vegan diet. I am still learning but I am loving my new diet. The worst part about it is when people look at me like I'm an alien when I tell them I don't eat animals.
So fast forward to present. Being vegan is a daily adventure. I don't plan to only blog being vegan but it is the main reason I decided to start blogging.
Saturday morning I made the yummiest Blueberry and Banana bread from blog.fatfreevegan.com. It is so moist and
delish! Sorry for the bad pics but they are from my iPhone and I am not into photography.
Saturday afternoon was nice and relaxing. I purchased 3 cookbooks. The Kind Diet, The Conscious Cook and Vegan Yum Yum. I CAN NOT wait to cook everything in them. For the 4th of July get together last night, I made the Cheesecake with berries in The Kind Diet.
It was beautiful and pretty tasty. I may have cooked it too long because it was less creamy than I hoped but I think it was a darn good 1st try.
